Recipe for Peach and Passionfruit Jam
Here is a recipe for peach and passionfruit jam. You might like to give it a go.
Ingredients:
- 1 kg of cling stone peaches (eg golden queens) peeled, seeded, and chopped finely
- ½ cup of lemon juice
- 440g white sugar approx. ( 2-3 cups)
- 1/3 cup of passionfruit pulp (cut the passionfruit in half and scoop out the pulp with a teaspoon)
Method:
Combine peaches and juice in large saucepan, bring to the boil.
Reduce heat, simmer, covered, for about 15 mins or until peaches are soft.
Measure fruit mixture; allow ¾ cup of sugar for each cup of fruit mixture. Return fruit mixture and sugar to pan; stir over high heat, WITHOUT BOILING, until sugar dissolves
Bring to the boil; boil uncovered, WITHOUT STIRRING, for about 15 mins, until jam jells when tested. Then stir in passionfruit pulp.
Pour into jars in usual way
